I am all about super simple delicious sides and this one hits the mark. To save time you can prep the sprouts and mushrooms the night before and roast them when you are ready. Make sure to make extra for leftovers!
Brussels & Shrooms
Ingredients:
16 oz brussel sprouts, trimmed and quartered
8 oz mushrooms, quartered
1 tbsp avocado oil
salt & pepper to taste
Directions:
1. Preheat oven to 425ΒΊ.
2. Trim and quarter the brussel sprouts.
3. Clean and quarter the mushrooms.
4. Heat avocado oil in oven safe skillet over medium-high heat. Add sprouts and mushrooms and season with salt & pepper to taste.
5. Cook over medium-high heat for 2 minutes. Stir and cook for another 2 minutes.
6. Transfer pan to oven and roast for 10-12 minutes until sprouts are fork tender.
7. Remove from oven and eat. π
