Last week we celebrated Thanksgiving at the office and the wellness team was assigned “desserts”. The first thought I had was, Whole Foods —> Apple Pie —> Done. But as we got closer to the date, I reminded myself that before I had lil’ G I loved to take delicious food and find a way to “healthify” it. Viola´, my version of healthy apple pie was born and according to my work family, it was a winner.
So, if you are lucky enough to be assigned “dessert” during the upcoming holidays, why not break out your mad skills and shock your family and friends with a healthy dessert. And if you are lucky enough to have any left over, have dessert for breakfast without one ounce of guilt!
Healthy Apple Crisp
Ingredients:
5 honey crisps apples (or other variety you like), peeled and cut into bite sized pieces
1/4 cup maple syrup
2 tbsp arrowroot powder
juice of 1/2 lemon
1/4 tsp ground allspice
3/4 tsp ground cinnamon
1 cup old fashioned oats
1/2 cup hazelnut meal (or other nut meal)
1/2 cup chopped pecans
1/4 cup sunflower seeds
1/4 cup brown sugar
1/4 tsp sea salt
1/4 cup grassfed butter, melted
3 tbsp organic plain greek yogurt
Directions:
1. Preheat oven to 350º.
2. In large bowl, mix apples, maple syrup, arrowroot powder, lemon juice, allspice & cinnamon. Transfer to 9x9 baking dish. Set aside.
3. In medium bowl, combine oats, hazelnut meal, pecans, sunflower seeds, brown sugar and salt. Mix thoroughly and then add melted butter and greek yogurt. Stir until well combined.
4. Sprinkle topping over the apple mixture until evenly distributed.
5. Bake for 45 minutes or until the filling is bubbly and the topping is browned.
6. Nobody will ever know it is healthy. 😉
